Millet with Butternut Squash

Ingredients:
-About 3 cups of pumpkin cut to small pieces (1 smaller buttenut squash)
-1 cup of washed, drained millet
-1 tablespoon butter (10-15 ml)
-1 to 2 cups of milk (I use soy vanilla milk)
-1 apple (if desired)
-dried fruits (if desired, i.e. raisins, apricots, cranberries…)

In the pot combine millet and pumpkin and pour water to cover.
Bring to boil, reduce heat and leave to simmer until done (~ about 20 min).
Mash everything with the potato masher.
Add butter, milk, dried fruits, and apple previously cut to small pieces and stir.
Bring to boil again.
Turn off the heat, leave under cover for half an hour.
